Where it gets interesting is the older stock closer to Main Street. Some of those homes have thicker plaster and non-standard framing, so I scan before I drill instead of assuming.

Yes. Framing and heat clearance get checked first. On drywall the wires can usually run inside the wall. On brick they cannot, so the concealment method changes.
